Cholle Bhature

This Cholle Bhatura, typically from North India is a great meal especially for Sunday brunch. It surely makes our head turn the moment we see the huge puffed bhatura in the food courts.
 
 
Ingredient for Bhatura
 
1/2 kg flour 
1 tsp sugar
1/2 tsp salt
1/2 cup refind oil
200 ml soda water
Oil for frying
 
 
Method
Mix flour, sugar and salt in kneading bowl. Add soda water and make the dough. Now add half quantity of the oil and pat it well.
 
keep the dough for atlest an hour to ferment. Now add the remaining oil and roll it well in the doigh. Keep it for another 10 min.
 
Make small bowls, and roll it with the rolling pin. You may use oil if required. You can make it round like chapatti or oval shaped. Normally we make it oval.
 
Heat the oil in a large deep cooking pot. Once the oil is hot enough add the rolled dough to fry. It makes around 12-14 bhaturas.
 
Ingredients for Cholle
1 cup cholle (white chick peas)
1 tea bag
3-4 cloves
2 medium size finely cut onion
1 small onion (thin strips)
2 tbsp oil
1 green chilly
1 tbsp coriander powder
1 tbsp cumin seeds
1 tbsp salt
1/2 tbsp tamarind paste
 

Method
 
Soak the chick peas overnight. In the morning, add (whole) tea bag and the cloves to the chick peas and boil for 10 mins approx.
 
In a large skilled, heat the oil, and add cumin and green chilly. When the cumin gets to sizzle, add onion and saute it for 3-4 min, till it gets pale brown. Add salt, coriander powder, tamarind and mix well.
 
Remove the tea bag from the boiled chick peas before adding it to the masala mixture. The team bag is used to give it brown color which complements well with bhatura.
 
Now add the boiled chick peas in the skilled, toss it well so that the masala covers it well. Add water if required.  Cover it with the lid and put it on low flame for 10-12 minutes. 
 
Garnish it with the onion and coriander leaves before serving.
 
This is good for 2-3 people.
