Gajar ka Halwa (Carrot Halwa)

This popular desert is typical of North India. It is a great desert for winters when the red carrots are in abundance.
1/2 kg red carrots (preferably)
1/2 cup water
1/2 cup castor sugar
1-2 tbsp clarified butter (ghee)
20 gm cashewnuts
10 gm raisins
50 gm khoa
Gajar Ka Halwa
Grate the carrots.

Add water and boil the grated carrots for approx 5 mins so that it becomes tender. Drain excess water form the carrots.

Place a non-stick frying pan on a medium flame. Put the carrots, add sugar. Fold the sugar for approx 10 mins so that it covers the carrot well.

Add 1 tbsp clarified butter to the carrots and mix it well. Now let the carrots cook on a low flame for approx 25-30 mins, so that color changes to deep red. Cover it with the lid. Keep tossing the carrots intermittently to avoid sticking to the pan.

Add khoa and toss it well.

Once the color changes, you will have a fine aroma of the dish. Garnish it with cut cashews and raisins.

And its ready to eat the sumptuous Gajar halwa (Carrot Halwa).

You can also make the dish using a can of condensed milk instead of sugar and khoa.
