Milk Cake


Milk cake is a very famous sweet, loved across India.

Ingredients: (will make 6 pieces)
  • 1 liter milk
  • Lemon juice (2 lemon)
  • 1/2 cup sugar
  • 1 tbsp Cardamom powder
  • Clarified butter or Ghee to grease the plate
  • Sliced pistachios for garnish
Method:
  • Make a very thin layer of ghee or butter on a plate and keep aside
  • Take a heavy bottom saucepan and boil the milk. Now add lemon juice to the boiled milk. It will start to curdle. Continue boiling for another 5 minutes and remove 1-2 cups of milky water (whey). It will help to reduce the tartness in mixture.

  • Continue to cook and stir the mixture until the milky water is evaporated. This will take around 15-20 minutes.
  • Now add sugar and cardamom and keep stirring for another 5-10 minutes. The mixture will start coming together. Turn the gas to lower heat and cook for another 5 minutes until mixture changes to a slightly brown color.

  • Transfer mixture to the greased plate and press into a square shape and garnish with pistachios.

Note: Use minimum amount of lemon juice to start curdling process.
