Phirni (Rice Pudding)

This sumptuous dessert is my all time favorite. It takes less time compared to Kheer, and tastes better too. Expecting guests over dinner, soak some rice overnight, to prepare this mouth watering dessert.



20 gm rice
500 ml milk
6-7 tbsp sugar
7-8 cut almonds

Soak the rice overnight in water.
Next morning, drain the water, and grind the rice to fine powder. You can add little milk if required. 
Keep the milk on the low flame. Add the grounded rice to it. Stir it continuously in order to avoid lumps or the rice to stick on the pan.
Stir it for approximately 10 minutes or till the milk gets to thicken. Add sugar and stir for another 1-2 minutes.
Remove it from the flame and let it cool for 5-7 minutes. Now pour it in small glass bowls. It makes around 5 bowls of this dessert. 
This is great for individual serving as it doesn't disturbs the setting of the pudding. Garnish it with the cut almonds. You can also set the pudding in the flat earthen-ware dishes.
Refrigerate it for 5-6 hours, and is ready to be relished after the perfect dinner.
