Eggless Pin wheel Cookies

Pin wheel cookies are a great snack, though it has a bit long process to make. You would need to refrigerate the dough a multiple times so that it kneads and cuts well. It comes out very classy and people are easily mistaken as if they are bought from the bakery.

1 1/2 cups unsalted butter
1 tbsp vanilla essence
1 cup powdered sugar
2/3 cup regular granulated sugar
3 cups flour (maida)
1 tsp salt
1 tsp baking powder
1/4 cup cocoa powder

Soften the butter in the microwave so that it is easy to blend. 

Take a huge mixing bowl, add butter, sugar (both powdered and granulated), vanilla essence and mix it well. In a separate bowl mix the flour, salt and baking powder.

Now add the flour mix to the butter mixture and knead it in dough.

Divide the dough in two halves. Add cocoa powder to one half of the dough and mix it well so that the dough gets chocolate colored. Now divide the plain dough and cocoa dough in two sections each and place it on a butter paper (alternatively you can use empty milk pouches).  Roll it and make it in a rectangular shape of 1/2 inch thickness. Cover it with the butter paper. Similarly roll the other 3 dough, and place it  individually in between butter paper. 

Refrigerate for 2 hours.

Now take out out he plain dough, remove the top butter sheet, place the cocoa dough on top. Put the butter sheet and pat  it so that they stick well. Now roll the dough into a cylinder sliding butter sheet as you roll. Roll the butter sheet tightly and refrigerate it for another 30 minutes. Now do the same for other set of plain and cocoa dough.

Take out the first dough , unwrap the butter sheet, and cut it laterally in 1/4 inch round swirls. You will see the cocoa swirly in it.

Preheat the oven for 10 minutes at 200 degrees Celsius.  Brush oil onto the baking tray and keep the cut dough in it to bake. Set the temperature to 180 degrees for 10-12 minutes. See image.

Once they are baked, remove them from the tray and keep it on wire rack to cool. And while this set is cooling, you can put the second set of rounds to bake.

This makes about 3 doz cookies.

These egg-less cookies are a great accompaniment for the evening cuppa of tea.
