Pina Colada Beach Ice cream

Pina Colada Beach Ice Cream
Expecting guests for lunch, how about treating them with this Hawain dessert 'Pina Colada Beach'.


1 medium sized pineapple (avoid using the canned pineapple as it doesn't give much flavour)
120 gm (10 Tbsp sugar)
1 cup Coconut milk
100 ml cream
1/2 tsp rum


Cut the pineapple in small pieces and add 3-4 tbsp sugar. Keep it aside for 15 minutes.
Now boil the pineapple for a minute in its own syrup.

Strain the pineapple, draining all the water from it.

In a mixer, add the drained pineapple pieces, coconut milk, cream, rum and 4 tbsp sugar. Run the mixer for 1-2 minute so that all are blended well.

Pour the mixture in the glass tray and set it in the freezer. 
You can garnish it with the cut pineapple or a swig of mint.

Let it freeze for 4-5 hours, and there your Pina Colada Beach is ready to be served on a perfect afternoon.

It makes around 7-8 scoops of the dessert.
