Kaddu ka Soup (Pumpkin Soup)

Healthy, tasty and satisfying pumpkin soup is a great for family gatherings. We experimented this one day, and believe me, we truly enjoyed it till the end.

1 medium size yellow kaddu (pumpkin) 
1 sweet potato 
1 large pink onion 
2 cloves of garlic 
7-8 basil leaves 
1/2 tsp nutmeg powder 
1/2 tsp cinnamon powder 
4 tbsp fresh cream 
1 tsp black pepper powder 
4-5 stems of fresh coriander 
4 tbsp olive oil 
1/2 cup water 
2 bread slices for croutons 
Salt to taste 
Pumpkin Soup


Cut the pumpkin in 2 halves and scoop out the seeds. Peel the onion. 

Preheat the oven for 10 min on 150 degrees Celsius.

Now put the onion & pumpkin in the baking tray, and drizzle some olive oil onto it. Bake it for 20-25 min at 250 degrees Celsius. 

Remove it from the oven and peel the skin of the pumpkin once it cools off. Cut the big chunks of pumpkin and sweet potato.  

Take a pressure cooker (heavy bottom pan) add sweet potato, pumpkin, onion, basil leaves, nutmeg powder, cinnamon powder, salt, and bring it to boil and then simmer for another 10 min.

Grind the boiled vegetables in a mixer. Handle it carefully as the mixture is hot.

Meanwhile prepare the croutons for the soup.

Take the bread slices, drizzle some olive oil and toast them in a grill till they are nicely brown. Cut them in 1/2 inch cubes.

Place the frying pan on medium flame. Add 2 tbsp oil. Once it is hot, add fresh coriander leaves. Toss them for few seconds, then add the vegetables and 1/2 cup of water. Bring it to boil and then reduce the flame to simmer for 15-20 minutes. 

There is the pumpkin soup ready to relish.

Now pour the steaming soup in the cups, add fresh cream,coriander leaves and the croutons on top and there is ready to serve.
