Super Moist Carrot Cake

Super excellent dessert for the super special people. It is just amazing.

3 eggs
1 1/2 cup sugar
1 cup oil
2 cups flour
5 carrots (grated)
1/2 tsp salt
1 tsp baking powder
2 tsp finely grounded cinnamon powder
chopped walnuts
1 tsp vanilla 


1. Whisk the eggs in a large bowl. Add sugar and oil and mix it well. You can use the electric blender for approximately 1 minute.
2. Preheat the oven to 250 degrees Celsius.
3. Prepare the baking tray of 9 inch length or diameter. Dust the baking tray with the flour after greasing it with the oil.
4, Now add flour and mix it well. You can continue using the electric blender all throughout the process. But just ensure to mix it in one direction only.
5. Add the vanilla essence, and mix. 
6. Add salt, baking powder and fold it well in the batter.
7. Finally add the grated carrots and mix it well so that it is evenly b;ended. Sprinkle the chopped walnuts.
8. Pour the batter in the baking tray and set it in the oven for 160-180 degrees Celsius for approximayely 40 minutes. Put the toothpick in the center of the cake, and if comes clean then the cake is ready. Else you can keep for another 5-10 minutes.

You can enjoy this delicious cake with a scoop of vanilla ice cream.
